Description

Delightful Strawberry Custard Bars that combine juicy strawberries with a creamy custard on a buttery crust.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup cornstarch
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine the all-purpose flour and powdered sugar in a mixing bowl. Add the softened butter and mix until it resembles coarse crumbs.
  3. Press the crumbly mixture evenly into the bottom of your greased baking dish.
  4. Bake for 15-20 minutes or until the edges turn a light golden brown.
  5. Whisk together the eggs and granulated sugar in another bowl. Add the milk, vanilla extract, and cornstarch, whisking until smooth.
  6. Fold in the sliced strawberries gently into the custard mixture.
  7. Pour the strawberry custard mixture over the baked crust and spread it evenly.
  8. Bake for an additional 25-30 minutes until the custard has set.
  9. Let the pan cool completely before cutting into squares.
  10. Top with freshly whipped cream if desired and serve.

Notes

Make-ahead by preparing a day in advance and refrigerating. For quicker results, an air fryer can be used.
