Description

A vibrant quick bread infused with the flavors of fresh strawberries and zesty lemon, perfect for any summer occasion.


Ingredients

  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces fresh strawberries, hulled and chopped
  • ¾ cup milk
  • ½ cup unsalted butter, melted
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Juice of half a lemon
  • Zest of one lemon
  • ¼ cup granulated sugar for glaze
  • 2 tablespoons warm water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Combine the flour, granulated sugar, baking soda, and salt in a large mixing bowl.
  3. Whisk together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest in another bowl.
  4. Pour the wet ingredients into the dry ingredients, folding gently until just combined.
  5. Fold in the hulled and chopped strawberries carefully.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 55-65 minutes until a toothpick comes out clean.
  8. Mix the remaining sugar, lemon juice, and warm water for the glaze.
  9. Cool the bread for 10 minutes in the pan, then transfer to a cooling rack and drizzle the glaze over the top.
