Ingredients

  • 1 cup bread flour
  • 1 cup sourdough starter (active)
  • 1 cup mashed strawberries
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup water (as needed)
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Mix the dry ingredients in a large mixing bowl: combine 2 cups of all-purpose flour, 1 cup of bread flour, 1 tablespoon of sugar, and 1 teaspoon of salt.
  2. Incorporate wet ingredients by adding 1 cup of active sourdough starter and 1 cup of mashed strawberries to the dry mix.
  3. Hydrate the dough by gradually drizzling in water, mixing until a soft, slightly sticky dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. First rise: Place the dough in a greased bowl, cover, and let it rise for 2-4 hours until doubled in size.
  6. Shape the dough into a loaf and place it in a greased loaf pan. Allow it to rise again for 1-2 hours.
  7. Preheat the oven to 375°F (190°C).
  8. Bake the bread for 30-35 minutes until golden brown and sounds hollow when tapped.
