Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup bread flour
- 1 cup sourdough starter (active)
- 1 cup mashed strawberries
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup water (as needed)
- 1 tablespoon olive oil (for greasing)
Instructions
- Mix the dry ingredients in a large mixing bowl: combine 2 cups of all-purpose flour, 1 cup of bread flour, 1 tablespoon of sugar, and 1 teaspoon of salt.
- Incorporate wet ingredients by adding 1 cup of active sourdough starter and 1 cup of mashed strawberries to the dry mix.
- Hydrate the dough by gradually drizzling in water, mixing until a soft, slightly sticky dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- First rise: Place the dough in a greased bowl, cover, and let it rise for 2-4 hours until doubled in size.
- Shape the dough into a loaf and place it in a greased loaf pan. Allow it to rise again for 1-2 hours.
- Preheat the oven to 375°F (190°C).
- Bake the bread for 30-35 minutes until golden brown and sounds hollow when tapped.
- Cool the bread for at least 15 minutes before slicing.
Notes
Make-ahead: Prepare the dough a day in advance, letting it rise in the refrigerator overnight. Use an active and bubbly sourdough starter for best results.
