Description

A vibrant summer salad combining grilled chicken, sweet corn, and crisp cucumbers in a creamy dressing.


Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the chicken by seasoning it generously with salt, pepper, and smoked paprika. Grill or roast until fully cooked, about 6-7 minutes per side. Allow to cool before dicing.
  2. Grill the corn over medium heat, turning until charred, about 10 minutes. Cut kernels off cob when cool. If using canned corn, drain and rinse.
  3. Chop the cucumbers and finely chop the red onion.
  4. Mix the dressing in a bowl with mayonnaise, Greek yogurt, lime juice, cilantro, paprika, salt, and pepper until smooth.
  5. Combine chicken, corn, cucumbers, and red onion into the dressing, folding gently to coat.
  6. Taste and adjust seasoning if necessary.
  7. Chill the salad in the fridge for at least 30 minutes for best flavor.

Notes

For a make-ahead meal, prepare the salad the night before and let it chill overnight.
