Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup bell peppers, chopped (red, yellow, and green)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 1/4 cup vinegar (white or rice vinegar)
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice (for serving)

Instructions

  1. Whisk together the soy sauce, vinegar, brown sugar, and cornstarch until smooth. Set aside.
  2. Heat vegetable oil in a large skillet over medium heat and let it shimmer.
  3. Add the diced chicken to the skillet, sautéing for 5-7 minutes until golden brown.
  4. Toss in the chopped bell peppers and pineapple chunks, cooking for another 3-5 minutes.
  5. Pour the prepared sauce over the chicken, bell peppers, and pineapple, stirring to coat.
  6. Allow to simmer for 2-3 minutes to thicken the sauce.
  7. Season with salt and pepper to taste.
  8. Serve over fluffy, warm rice.
