Instructions
- Whisk together the soy sauce, vinegar, brown sugar, and cornstarch until smooth. Set aside.
- Heat vegetable oil in a large skillet over medium heat and let it shimmer.
- Add the diced chicken to the skillet, sautéing for 5-7 minutes until golden brown.
- Toss in the chopped bell peppers and pineapple chunks, cooking for another 3-5 minutes.
- Pour the prepared sauce over the chicken, bell peppers, and pineapple, stirring to coat.
- Allow to simmer for 2-3 minutes to thicken the sauce.
- Season with salt and pepper to taste.
