- 4 small sweet potatoes
- 1 tablespoon avocado oil
- Shredded lettuce
- Red onion
- Diced tomatoes
- Pickles
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel (if desired) and dice sweet potatoes into bite-sized pieces.
- Toss the diced sweet potatoes with avocado oil, garlic powder, onion powder, and salt and pepper.
- Spread the sweet potatoes on a lined baking sheet in a single layer.
- Bake for about 30–40 minutes, stirring halfway through.
- Heat a skillet over medium heat and add the ground beef, breaking apart as it cooks for about 8 minutes.
- Stir in Worcestershire sauce, along with salt and pepper.
- Assemble bowls with a layer of lettuce, roasted sweet potatoes, ground beef, topped with red onions, tomatoes, and pickles.
- Drizzle your favorite sauce on top.
