Description

A vibrant and hearty bowl featuring roasted sweet potatoes, seasoned ground beef, fresh lettuce, and a variety of toppings, creating a delightful balance of flavors.


Ingredients

  • 1 lb lean ground beef
  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • Shredded lettuce
  • Red onion
  • Diced tomatoes
  • Pickles
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel (if desired) and dice sweet potatoes into bite-sized pieces.
  3. Toss the diced sweet potatoes with avocado oil, garlic powder, onion powder, and salt and pepper.
  4. Spread the sweet potatoes on a lined baking sheet in a single layer.
  5. Bake for about 30–40 minutes, stirring halfway through.
  6. Heat a skillet over medium heat and add the ground beef, breaking apart as it cooks for about 8 minutes.
  7. Stir in Worcestershire sauce, along with salt and pepper.
  8. Assemble bowls with a layer of lettuce, roasted sweet potatoes, ground beef, topped with red onions, tomatoes, and pickles.
  9. Drizzle your favorite sauce on top.

Notes

Feel free to customize with other veggies or sauces based on your taste preferences. Can be made vegan by substituting beef with plant-based options.
