Description

Ingredients

  • 2 tablespoons Olive Oil (Or avocado oil)
  • 1 teaspoon Smoked Paprika (Or regular paprika)
  • Salt and Pepper (to taste)
  • 1 pound Ground Beef (Or turkey, chicken, or black beans)
  • 2 tablespoons Taco Seasoning
  • 1 cup Pico de Gallo
  • 1 cup Guacamole
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • Optional Toppings: Crumbled cheese, lime wedges, and crunchy tortilla chips

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Roast the Sweet Potatoes: Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes.
  3. Cook the Ground Meat: In a skillet, heat oil over medium-high heat. Add ground beef and cook until browned, then stir in taco seasoning.
  4. Prepare the Toppings: Chop vegetables for pico de gallo, mash avocados for guacamole, and prepare sour cream.
  5. Assemble the Taco Bowl: Start with sweet potatoes, top with ground meat, pico de gallo, guacamole, and sour cream. Add optional toppings as desired.
