Description

Indulge in the rich and creamy layers of these decadent brownies, combining fudgy chocolate, minty fluff, and Oreos.


Ingredients

  • 4 ounces baking chocolate
  • 3/4 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons espresso or brewed coffee (optional)
  • 1 cup all-purpose flour
  • 12 Cool Mint Oreo Cookies, hand-crumbled
  • 1 7-ounce jar Marshmallow Fluff
  • 1/8 teaspoon mint extract
  • 8 drops green food coloring (or to desired shade)
  • 1/2 cup butter or margarine, softened
  • 3 to 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 splash of milk (if necessary)
  • 3/4 cup white chocolate chips, melted
  • 18 Cool Mint Oreo Cookies, hand-crumbled (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch pan with foil and spray with cooking spray.
  2. Melt the baking chocolate and butter together until smooth.
  3. Mix in the granulated sugar until well blended.
  4. Add eggs one at a time, mixing thoroughly, followed by vanilla extract and optional espresso.
  5. Fold in flour gently until just combined, then fold in Cool Mint Oreos.
  6. Pour the brownie batter into the prepared pan and spread evenly.
  7. Bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  8. In a bowl, mix Marshmallow Fluff, mint extract, and food coloring until smooth.
  9. Spread the mint filling over the cooled brownie layer evenly.
  10. Beat softened butter until creamy, gradually mix in powdered sugar and vanilla, adjust consistency with milk if needed.
  11. Fold in melted white chocolate, spread over the mint filling, and top with hand-crumbled Oreos.
  12. Chill the brownies in the fridge for at least an hour before slicing.

Notes

These brownies can be made a day in advance for easier preparation. Allowing them to chill helps set the layers beautifully.
