- 3/4 cup unsalted butter, melted
- 2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons espresso or brewed coffee (optional)

- 12 Cool Mint Oreo Cookies, hand-crumbled
- 1 7-ounce jar Marshmallow Fluff
- 1/8 teaspoon mint extract
- 8 drops green food coloring (or to desired shade)
- 1/2 cup butter or margarine, softened
- 3 to 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 splash of milk (if necessary)
- 3/4 cup white chocolate chips, melted
- 18 Cool Mint Oreo Cookies, hand-crumbled (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch pan with foil and spray with cooking spray.
- Melt the baking chocolate and butter together until smooth.
- Mix in the granulated sugar until well blended.
- Add eggs one at a time, mixing thoroughly, followed by vanilla extract and optional espresso.
- Fold in flour gently until just combined, then fold in Cool Mint Oreos.
- Pour the brownie batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
- In a bowl, mix Marshmallow Fluff, mint extract, and food coloring until smooth.
- Spread the mint filling over the cooled brownie layer evenly.
- Beat softened butter until creamy, gradually mix in powdered sugar and vanilla, adjust consistency with milk if needed.
- Fold in melted white chocolate, spread over the mint filling, and top with hand-crumbled Oreos.
- Chill the brownies in the fridge for at least an hour before slicing.
Notes
These brownies can be made a day in advance for easier preparation. Allowing them to chill helps set the layers beautifully.
