Description

Ingredients

  • Fettuccine or Tagliatelle pasta
  • 2 tablespoons truffle oil
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve a cup of pasta water.
  2. Sauté the minced garlic in a skillet with truffle oil until fragrant, about 1 minute.
  3. Add the heavy cream to the skillet and bring to a gentle simmer.
  4. Incorporate the Parmesan cheese, stirring until melted and smooth.
  5. Combine the drained pasta with the sauce, tossing to coat. Add reserved pasta water for desired consistency.
  6. Season with salt and freshly cracked black pepper to taste.
  7. Serve with a drizzle of truffle oil and a sprinkle of fresh parsley.

Notes

For a lighter option, substitute heavy cream with half-and-half or a dairy-free alternative. Use freshly grated cheese for the best melting.
