Description

A delightful blend of chicken, pasta, sun-dried tomatoes, and creamy Parmesan sauce that encapsulates the essence of Italian warmth and flavor.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted boiling water until al dente. Drain and reserve a cup of pasta water.
  2. Warm the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and lay in the skillet.
  3. Cook for about 6-7 minutes per side until golden brown. Transfer to a plate to rest.
  4. Add minced garlic and sun-dried tomatoes to the skillet, sautéing for 1-2 minutes.
  5. Stir in heavy cream and let it simmer gently, thickening the sauce.
  6. Whisk in grated Parmesan cheese until melted and smooth.
  7. Add fresh spinach and stir until wilted.
  8. Slice the rested chicken and return it to the skillet with cooked pasta. Toss together, adding reserved pasta water to reach desired consistency.
  9. Serve warm, garnishing with extra Parmesan and a drizzle of olive oil.

Notes

For meal prep, prepare sauce and pasta earlier, then combine when ready to serve. Customization options include using grilled shrimp instead of chicken or gluten-free pasta.
