- 2 boneless, skinless chicken breasts
- 8 oz pasta (penne or fusilli)
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta in a pot of salted boiling water until al dente. Drain and reserve a cup of pasta water.
- Warm the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and lay in the skillet.
- Cook for about 6-7 minutes per side until golden brown. Transfer to a plate to rest.
- Add minced garlic and sun-dried tomatoes to the skillet, sautéing for 1-2 minutes.
- Stir in heavy cream and let it simmer gently, thickening the sauce.
- Whisk in grated Parmesan cheese until melted and smooth.
- Add fresh spinach and stir until wilted.
- Slice the rested chicken and return it to the skillet with cooked pasta. Toss together, adding reserved pasta water to reach desired consistency.
- Serve warm, garnishing with extra Parmesan and a drizzle of olive oil.

For meal prep, prepare sauce and pasta earlier, then combine when ready to serve. Customization options include using grilled shrimp instead of chicken or gluten-free pasta.
