Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat until shimmering but not smoking.
- Add minced garlic and sauté for about 30 seconds.
- Toss in the mixed vegetables and stir-fry for 3-4 minutes.
- Push the vegetables to one side and add the cold cooked rice on the opposite side.
- Pour the soy sauce and sesame oil over the rice, mixing everything together.
- Stir in sliced green onions and season with salt and pepper.
- Cook for another 2-3 minutes until everything is heated through.
- Serve immediately and enjoy!
Notes
Use day-old rice for the best texture. Customize with any vegetables you have on hand.
